Posted July 11, 2011. You can't as far as I'm aware. The only way to get it to shut off is by parking it in a garage and letting the door close, then when you let the garage door back open, your car will be off. I think so far the only GTA games where you can turn your car off manually is in GTA IV and its DLCs.
